Spaghetti Latini li garlic oil chilli peppers selection and Pianogrillo evo

Ingredients:
300 gr spaghetti
2 garlic cloves
4 mixed fresh chilli peppers, and some dried chilli
olio ev Pianogrillo qb
chopped parsely
pecorino cheese
rock salt
water

procedure
In a big sautè pan heat some Pianogrillo evo (comes well with a good evo as well) with the garlic crushed and some fresh julienne chilli (if u don't like it too spicy set the seeds on the side)
As the garlic starts to genly fry add a little of the pasta boiling water and add the dry chilli.
Put the pasta in hot boiling water add with rock salt as the garlic looks tender place it in a chopping board and pass it with the blade of a knife till it gets to puree consistency.
Spaghetti needs to be cooked in the water 5 or six of the 8 minutes needed.
then they need to be placed in the olive oil and water mixture.
sautè the spaghetti for 2 minutes in the pan and if needed add some of the pasta cooking water.
Then add the parsley and the pecorino cheese some evo and sautè for a few seconds till it gets nice and creamy
